Ingredients Culinary Series - Smoke
Join Rays on the Bay for our quarterly Ingredients Series showcasing an array of culinary events featuring inspiring Big Island Edibles. In partnership with our local farm community, our star ingredient will include kiawe. Taste the flavors of this Hawaiian mesquite in a 5-course dinner overlooking Keauhou Bay, paired with craft beers and local artisanal spirits – anchored by Big Island Brewhaus’ own smoke beer “paka bock.” Get a closer look behind the scene with a tour of Kaloko Honokohau National Historic Park, followed by a picnic at Kona Nghtingale Farm.
Ingredients will launch Friday, February 17 at 6:30pm with a majestic night filled with savory sensations on oceanfront Paakai Point at the Sheraton Kona. The unforgettable evening will feature an active chef station where attendees will learn about Kiawe and smoke flavor profiles all while tasting the bounty of Hawaii island. The multi-course menu includes Wild Ahi served with a hint of crisp pork belly, Hawaii Island Goat Cheese “Gnudi”, and Natural” Big Island Beef Striploin, to name a few items.
